INSTITUTE OF HOSPITALITY MANAGEMENT

Front Office

A well-simulated and air-conditioned front office laboratory is specifically designed to replicate the actual lobby of a 5-star hotel. In the front office laboratory, practical sessions are held, wherein the students are trained to take guest check-ins, check-outs and face various mock–situations put forth by the trained lecturers (as in practical cases), thereby training them to suitably deal with all kinds of guest requests.

Housekeeping

Within the air-conditioned housekeeping laboratory is a meticulously designed guest room boasting well-thought-out interiors. Additionally, there is a mock housekeeping laboratory and a laundry area outfitted with modern amenities like washing machines, dryers, and a designated washing space. This comprehensive setup offers students an authentic experience that accurately captures the essence of the department. It serves as a true-to-life representation of a standard housekeeping department encountered in a 5-star hotel. Furthermore, these facilities also manage the college's internal laundry requirements and oversee general maintenance and cleanliness throughout the campus.

Training Restaurant

Our air-conditioned training restaurant, "Savour," plays a pivotal role in refining the art of service techniques. With a seating capacity of 24, it includes a training bar that provides students with hands-on learning opportunities. The restaurant is thoughtfully equipped with a range of upscale amenities like silverware, glassware, tableware, and a gueridon trolley – all essential for delivering high-quality service. Operational during lunch hours every day, the students take on various roles such as managers, commis, pantry-in-charge, hosts, and hostesses on a rotational basis and curate themes for an enhanced dining experience.

Moreover, "Savour" doubles as a versatile venue, hosting small-scale conferences, luncheons, dinner meetings, presentations, and interviews. In these events, students take charge of management responsibilities, allowing them to gain practical insights. To meet the growing demand for restaurant service and to accommodate a greater number of students seeking practical exposure, these facilities are consistently expanded and upgraded.

Basic Training Kitchen

In the basic training kitchen, the initial steps into the realm of ‘Culinary Art’ are taken by the first-year students. Here, they acquaint themselves with diverse kitchen apparatuses and receive guidance on mastering intricate cutting techniques as their starting point. Following this, they delve into the fundamentals of regional, national, and international cuisine. The first-year students benefit from training in the basic training kitchen tailored to their needs.

Quantity Training Kitchen

Primarily designated for the progression of second-year students, the quantity training kitchen serves as a prominent arena for honing skills in crafting a variety of regional and national delicacies. Handling an average daily volume of 300 students, the QTK is equipped with heavy-duty machinery that facilitates large-scale cooking endeavours, including a tandoor for the preparation of barbecue menu items.

Advance Training Kitchen

In the advanced training kitchen, students in their third-year engage in the crafting of diverse international cuisines, with a primary emphasis on specialized cooking. The presence of 20 meticulously outfitted workstations, complete with contemporary culinary apparatus, significantly enhances the capacity for individualized student practice.
